1.5 kilograms of Gold Reinettes
100g soft brown sugar
3 free-range oraganic eggs
200g caster sugar
200g soft butter
200 gram almond flour
icing sugar or sliced almonds

These mini apple pies in combination with a punchy espresso make a tasty Italian dessert. The recipe is by Gino D'Acampo.

How to make Torta di mele e mandorle

Preheat the oven to 160°C

Cook the apples with the brown sugar over low heat until soft.

Beat the eggs with the caster sugar in a big bowl.

Mix in the butter until combined and creamy.

Mix in the almond flour until it's a thick paste.

If you opt for sliced almonds on top sprinkle them on now

Divide the cooked apples over 6 ramekins.

Then spread on the almond mixture.

Cook the pies in +/- 50 minutes golden brown.

Cook the pies for about 50 minutes until golden brown.

Serve the pies hot sprinkled with powdered sugar..

How a Gino achieves it we do not know but even if we leave the cakes in the oven to cool with the oven door slightly ajar, our beautiful domed pies sag. Very unfortunate but to the taste it does not make a difference.
