1 package Treccia pasta (AH)
200g pancetta
200 gram mini Roma tomatoes
2 onions
bunch flat leaf parsley
olive oil to taste
1 small tin tomato paste
serve it with
- 100 grams of Parmigiano
- sprig of basil
- Italian Focaccia bread
This simple pasta is ready soon, and can not fail, so it is just the right dish on December 5th. With the salty bacon, the fresh herbs and the sweet tomatoes it tastes delicious, kids love it. Expecting more company? Double the ingredients. What more do you want?

How to make this pasta dish
Put a pan with water on, bring it to a boil.
Cut the pancetta in little pieces.
Cut the Roma tomatoes in half.
Rinse the parsley, cut it fine and dab it dry with kitchen paper.
Fry the pancetta crispy in 2 tbspoons olive oil.
Snip the onions over the frying pan and bake it.
Also bake the tomatoes and parsley shortly.
Add the pasta when the water boils, stir now and then.
Drain the pasta after +/- 10 minutes, it has to be firm (al dente).
Pour a dash of olive oil into the drained pasta and add the tomato paste.
Add the baked tomatoes and pancetta.
Fold it into the pasta.
Serve the pasta with the basil and the parmigiano.
A wedge of Italian bread (focaccia or ciabatta) with some herbal butter and a green salad makes this pasta dish compleet.
