450g granulated sugar
juice of 1 lemon
550 ml water
75g cornstarch
2 teaspoons cream of tartare
30 ml rose water
50g icing sugar
foodcolouring, colour of choice
It is almost that time of year again, Eid al Fitr is coming. All the children are already excited because on July 5th the festivities start, so it's only two nights away! We are already getting started because there is a lot to do, but today we are making delicious, very sweet candy in cute colors! The Turkish Delight has to set in the fridge overnight, that's just possible!
How to make Turkish delight
Day 1
Line a 20x20 cm baking tin with waxed paper.
Put 350 ml of water, cream of tartar and corn starch in a pan.
Stir firmly until all is well combined.
Put the pan on medium heat, let it boil until it's really thick.
Meanwhile in another pan bring the sugar, the remaining 200 ml water and the lemon juice to a boil
Read the temperature, it should be exactly 116°C.
Remove the pan from the heat, stir in the cornstarch mixture until combined.
Put the pan back on low heat, simmer 20-30 min. until a thick pale yellow-ish.
Remove the pan from the heat, divide the candy in 2 portions.
Add rosewater and food colouring, stir it firmly together.
Spoon the mixture into the molds, spread it into the corners.
Allow the cooled candy to set overnight in the fridge.
Day 2
Lift the candy from the molds by the paper.
Remove the paper and cut the candy into squares.
Roll the cubes all around in icing sugar.
TIP!
Prepare several small containers if you like the Turkish Delight in multiple colours, also double the ingredients. Always mix the colours together with the rose water into the candy mixture.
