Shopping list for the pancakes
100g self-raising flour
½ tablespoon caster sugar
2 free-range organic eggs, separated
200ml buttermilk
25g butter
For the topping
25g butter
3 ripe pears
3 tablespoons maple syrup
On National Pancake Day, you bake extra delicious pancakes. We do think it's a shame that our monsters are still too young to participate in the campaign at school. But they already know what National Pancake Day entails. First, bake delicious pancakes and then take them to the grandparents, who may not have grandchildren (in the neighborhood). Such a fun campaign!
How to bake Buttermilk Pancakes with Pears
Peel, wash and cut the pears into 8 pieces.
Melt the butter in a large frying pan.
Fry the pears on medium high heat in the butter.
Fry until the pears turn golden brown but still firm.
Then add the maple syrup to the pears.
Let the pears warm through for 3-4 minutes.
Keep the pan with the pears warm in the oven.
How to make the pancake batter
Separate the eggs and set the egg yolks aside for now
Place the egg whites in the mixer,
Mix the egg whites until stiff.
Melt the butter on low heat.
Sift the flour with salt and sugar.
Stir the flour mixture until combined.
Place the yolks into a bowl and add the milk.
Whisk the mixture nice and smooth.
Add while beating the melted butter.
Pour the egg / milk mixture in the flour mixture.
Keep beating until smooth and combined.
Fold the beaten egg whites into the batter.
How to fry 3 pancakes in one go of +/- 10cm in diameter
The batter is ready, heat the frying pan and melt the butter.
Scoop 3 heaped spoons of batter into the pan and wait for little bubbles.
Flip the pancakes over and fry the other side golden brown as well.
Keep the pancakes hot with the pears, while you bake.
