Shopping list
500g pork tenderloin
8 slices pancetta, not too thin
fresh thyme sprigs
400g small potatoes
4 cloves garlic, unpeeled
sea salt & freshly ground black pepper
250g cherry vine tomatoes
Wash the potatoes.
Allow to drain well.
Grease the baking tin.
Cut the potatoes.
Preheat the oven to 200°C
Place the garlic on top and sprinkle with oil.
Bake the potatoes for 20 minutes and toss half way.
While the potatoes bake you prepare the pork already
Slice the pork thinly.
Roll the prok in pancetta.
Bind it with some thyme.
Set it aside in the refrigerator.
Remove - when the 20 minutes are up - the potatoes from the oven
Place the pork between the potatoes.
Make place for the tomatoes.
Put the tin back into the oven for 20 minutes.
The casserole is ready, we serve it with fresh cucumber slices and sea salt and pepper on the side, buon Appetito!
