Marinated Pork Skewers

from the barbecue

Marinade
100 ml tomato ketchup
1 tablespoon brown sugar
juice of 1/2 a lemon
2 garlic cloves, chopped
2 tablespoons soy sauce
small red onion
sea salt & ground pepper to taste

Skewers
400g pork, cubed
1 red + 1 green bell pepper
3 spring onions
olive oil to fry
optional
fried potatoes
green beans

We are not real fans of the barbecue but occasionally, because the kids like it so much, we do it anyway. Everything is ready, the barbecue is heated up, the meat is marinated and the table is set outside, but unfortunately, the weather is not co-operating. With the unexpected showers, our barbecue falls (literally and figuratively speaking) into the water every time. Better use the griddle again!

How to make marinated pork skewers

Stir all marinade ingrdients until well combined.

Coat the meat in marinade.

Wash and cut the bell peppers and the sping oninons.

Let the wooden skewers soak in water before you use them.

Thread pork and vegetables alternately on the skewers, brush with oil.

Grill 3-4 minutes on both sides until cooked and brown.

Serve the pork skewers optiobnal with baked potatoes and vegetables.
