125g self-raising flour
2 tablespoons caster sugar
1 teaspoon baking powder
¼ teaspoon vanilla extract
150 ml soya or almond milk
4 teaspoons sunflower oil, for frying
maple syrup
optional: fresh fruit to taste
Vegan is hip and because to us hip is not important, but animal welfare very much so we eat flexible. We halved our portions of meat, once a week we eat a vegetarian meal and 1 day a week fish, alternated with the occasional vegan meal. So these vegan pancakes do not have any butter, egg or cow's milk in them, in short, they are delicious without animal products.
Because our smallest mini-monster likes to drink Alpro growth milk, we use this soy toddler drink instead of soy milk. It works fine!
How to make vegan pancakes
Peel and slice the banana, apple, mango and orange.
Stir flour, sugar, salt and baking powder together.
Add the vanilla extract and soy milk to the flour mixture.
Wisk all together until a smooth batter without lumps.
Heat the frying pan with the oil, pour in 3 heaps (+/- 2 dessert spoons) of batter then spread the heaps in (a sort of) circles with the back of a spoon.
Bake the pancakes for approximately 1 minute.
Carefully flip them over and fry until golden.
Serve fruit and syrup on the side.
Heat the oven on the lowest heat, place waxed paper on the baking tray and place the fried pancakes on it to keep warm, until they are all ready.
