200g fresh lychees (clean weight)
75g caster sugar
1/2 lime, juice and zest
50ml water
Today we are making a special Chinese New Year's dessert, lychees in lime syrup. This dessert tastes fresh and clean, is very light and delicious! But it is more suitable for adults. Tomorrow we will bake Lotus cupcakes, especially for the mini monsters, with a lychee filling. This filling we make today too, we are busy anyway ;))
How to make the Lychees in lime syrup
Measure the water and pour it in a pan.
Weigh the sugar then add to the water.
Put on low heat, stir until the sugar is dissolved.
Remove the pan from the heat when the sugar is completely dissolved, set aside allow to cool completely
Meanwhile schrub the lime under the hot tap
Squeeze the lime and pour the juice into a bowl.
Grate the skin of half a lime and add it to the bowl.
Set the bowl with lime juice and zest aside for now.
Stir lime juice and zest into the syrup only when it's cold.
Crack and peel the lychees.
Weigh 150g lychees, without the skin.
Cut the lychees all around.
For mini-monsters you remove the pit but it is fine to serve adults the lychees with the pits, then they can stay whole
Pull out the stone, the lychees will not remain whole, but they will be filling anyway.
Add all the lychees to the lime-syrup mixture and stir to combine.
The lychee pieces are for the kids, they go into the Lotus cupcakes tomorrow.
Place the lychees in syrup in the fridge, then the flavours can blend
These lychees are for adults, they taste exactly the same.
