250g chilled butter, cubed
250g plain flour
50g freshly grated parmesan cheese
sea salt and freshly ground black pepper
optional: pinch of cayenne pepper
These savoury Parmesan cheese biscuits can be baked a day in advance and stored in a biscuit tin. Handy for New Year's Eve, even though they are ready quickly. They are easy to make and we quickly cut them out with a biscuit cutter. We made circles, but you can also cut out stars or hearts, if you like. We bake half the recipe, because 19 biscuits are enough for us. :))
How to make Parmesan cheese biscuits
Place the flour and butter in a bowl.
Grate the Parmesan cheese.
Rub the butter cubes into the flour.
Add the parmesan cheese to the mixture.
Grate sea salt and pepper over it.
Knead the dough and divide it in 2 halves
Wrap the dough and let it cool for 1 hour
Preheat the oven to 180°C / 160°C Fan and place baking paper on the baking tray
Please allow for multiple baking times
Sprinkle the baking mat with flour and roll out the dough thinly.
Cut small, round biscuits out of the dough.
Bake the biscuits for 12-15 minutes until golden brown.
Continue until all the dough is gone
Then let the Parmesan Cheese Biscuits cool completely on a wire rack
