Wadden sea shrimps in cured meat
half a cucumber
1 tablespoon mirin
2 tablespoons sushi vinegar
1 tablespoon mayonnaise
1 tablespoon crème frache
100 grams of peeled Wadden Sea shrimps
sea salt, to taste and freshly ground black pepper
30 grams smoked beef (thinly sliced)
a few sprigs of parsley
optional: baguette
Noord-Holland is located on the Wadden Sea of course, so the province has the tastiest Dutch shrimps. No wonder this is one of their regional dishes! We South Hollanders (Rotterdammers!) may live on the Maas, but we also love shrimps a lot. So today we eat North Holland shrimps in cured beef, delicious!
How to make them
Preparation
Peel the cucumber.
Scrape out the seeds.
Dice the cucumber finely.
Place the cubes into a bowl.
Stir the mirin and sushi vinegar through the cucumber cubes and set it aside
Put the mayo with the creme fraiche in a bowl.
Stir it together until combined, set aside.
Bake the pre-baked baguette.
While the bread cools, you put the starter or lunch dish together
Stir the shrimp into the cucumber cubes.
Fold the mayonnaise mixture into the shrimp.
Lay out the cured beef on cling film, roof tile-wise.
Spoon the shrimp mixture on the cured beef.
Roll the shrimp mixture into the cured beef.
Wrap the shrimp roll in cling flim.
Place the shrimp roll in the refrigarator.
Get the shrimp roll 10 minutes before lunch or dinner from the refrigerator to acclimatize
Cut the shrimps roll into pieces.
Serve the Waddenzee shrimps with baguette slices.
