For 10 waffles
260g plain flour
1 tablespoon baking powder
1 teaspoon sea salt flakes
1 tablespoon fine sugar
3 free-range organic eggs, lightly beaten
425 ml whole milk
110g butter, melted
For the chocolate sauce
175g chocolate, chopped in pieces
50g caster sugar
For the fried bananas
4 bananas, peeled and halved lengthwise
50 grams of butter
50g caster sugar

3 tablespoons double cream
For the fried bananas

On our Sunday off we bake waffles for a late, luxurious breakfast/brunch. We fry bananas with it and pour hot chocolate sauce over it. If you really want to be crazy, you can also add a scoop of vanilla ice cream. A lot of work? Pretty. Healthy? Well no. Tasty? Not normally so tasty! :)))
How to make waffles with fried banana and hot chocolate sauce
Preheat the waffle maker, electric or stove operated.
Place flour and baking powder in a large bowl.
Add the sugar and the sea salt flakes to the mixture.
Stir it all together until it is well combined.
Pour the milk into the mixture.
Mix it together into a thick, airy mixture.
Beat the eggs until loose.
Gradually beat in the eggs.
Add the melted butter.
Beat it into the mixture too.
Preheat the oven to 140°C
Pour the batter into the waffle maker.
Work fast to keep the warmth in.
Bake the waffles golden in 7-8 minutes.
In between baking we make the chocolate sauce
Chop the chocolate finely.
Melt it slowly, au bain marie.
Stir in the double cream.
While the chocolate melts you fry the bananas
Let the sugar caramelize in the butter.
Cut the bananas lengthwise in half.
Place the bananas in the brown butter mixture.
Bak them golden on both sides.
Now all is ready and you can plate up
Place the waffles on a plate and pour chocolate saus on top
Place banana on the side and optional a scoop of vanilla ice cream
