1250g watermelon (clean)
3 tablespoons caster sugar
500g preserve sugar (van Gilse special)
4 tablespoons lemon juice
juice of 1/2 orange
Watermelon jam has a fresh flavour but it needs a little extra to make it more flavoursome. You may add a little vanilla sugar and orange juice fto that effect or for the maxi-monsters a drop of booz, like mandarin liqeur for example.
How to make watermelon jam
Remove skin and pips of the watermelon.
Weigh the clean melon cubes.
Place the cubes in a colander, sprinkle sugar on.
Place the colander in a bowl then cover it.
Place the colander in the bowl overnight in the refrigerator so the melon juice is saved.
Day 2 Firstly pulse half the melon cubes in the blender.
Pour the juice into a pan, add lemon, orange juice and preserve sugar.
Boil the mix hard for 1 minute, add the melon pulp.
Stir in the melon cubes and boil for 1 more minute.
Pour the jam in sterilized jars, seal them tight.
Place the jars of melon jam 5 minutes upside down.
Allow the jars to cool then store them in a cool, dark place. When opened keep the jar in the refrigerator.
