Shopping list biscuits
75g soft butter
75g caster sugar
½ free-range organic egg (room temp.)
1 teaspoon vanilla extract
125 gram (Zeeland) plain flour
½ teaspoon baking powder
Fondant Icing
white and various pastel colours
icing sugar
a little water and a brush
piece of chocolate

Today we are baking little biscuits in the shape of ice creams as a treat to dole out in school. We use our trusted vanilla cookie dough, which comes together quickly and everyone loves these cookies. The fun cookie cutters are from the 3D Cookie Cutter Shop. We decorate the cookies with fondant, which the birthday boy likes best ;)
 
How to make the ice cream biscuits
Make the dough from our recipe and let it rest in the refrigerator for at least 1 hour. We'll pick up the recipe when the resting time is over.
Sprinkle flour on your workplace and place the dough on top.

Knead the cold dough briefly by hand.

Roll the dough until a thickness of 1 centimeter.

Cut out ice cream shapes using cookie cutters.

Place the biscuits on a baking tray lined with baking paper.

Slide the baking tray for minimal 1 hour in the fridge.

Preheat the oven to 175°C

Bake the biscuits for 12-15 minutes.

Allow the biscuits to cool completely.

Sprinkle icing sugar, roll the fondant thinly.

Cut the shapes out of fondant.

Stick the fondant parts onto the biscuits with a drop of water.

We continue baking and then put 3 cbiscuits in each bag.
The birthday boy is happy with the school treat and then so are we! :))
