Shopping list for +/- 20 cookies
150g white almonds
180g granulated sugar
2 free-range organic egg yolks
zest of half a lemon
50g granulated sugar
A Weespermop is an almond biscuit. You can make them very easily but you have to have patience. These cookies taste best if you leave the dough in the refrigerator for a few days, before baking them. If that is not a problem and you like almonds then you will want to make them more often. They are very delicious. They are retro but very tasty!
How to make Weespermoppen
Chop the almonds in the food processor.
Add the sugar en the lemon zest.
Mix all ingredients until combined.
Tip the dough from the bowl.
Knead it quickly into a cylinder.
Wrap the cylinder in cling film.
Place it 2 - 3 days in the fridge.
It is time to bake the biscuits so get the dough from the fridge
Loosen the dough.
Separate the yolks.
Put both into the food processor.
Blend it well.
Knead the almond dough smooth.
Roll it into 2 cylinders.
Place the cylinders in the fridge for 1 hour.
Preheat the oven to 180°C, place baking paper on the baking tray and get the dough
Cut into slices of 2.5 - 3 cm.
Roll all sides in the sugar.
Bake the biscuits +/- 10 minutes.
Until the edges turn brown.
Allow the Weespermoppen to cool.
Serve the biscuits with a cup of tea and enjoy!
