Bake your own potato chips

leftover potatoes
sunflower oil
seasonings of choice
flaky sea salt

Lots of paper towels!

Now we are rigorously cleaning the kitchen we find some left over potatoes, which are starting to sprout. We do not like to waste food so we bake potato chips. An unexpected, huge succes, nobody wants a store bought bag anymore!

How to make potato chips

Peel the potatoes then wash them in cold water.

Slice the potatoes very thinly using a mandoline.

Place the potato slices for 10 minutes in ice cold water.

Meanwhile heat the frying oil to 190°C.

Rub the slices a couple of times between your hands then rinse them again in plenty of cold water

Spread the potato slices on a layer of paper towels.

Dab the top of the slices dry with more paper towels.

Turn down the heat if the temperature reaches over 190°.

Fry the potatoes in batches in the oil for +/- 3 minutes.

Remove when the slices are golden brown on both sides.

Tap the chips on the rim of the frying pan to remove excess oil.

Place the chips in a bowl on paper towels to absorb remaning oil.

Toss the chips with flaky sea salt, (hot) paprika powder or any seasoning of your choice, when cooled serve the chips immediately.
