We make apples

of Marzipan
Sinterklaas, Dutch, With nuts, and Candy

200g white almonds
½ tablespoon almond extract
2 tablespoons honey
20 ml pasteurized egg whites
2 tablespoons fresh orange juice
1 cinnamon stick
10 halve almonds

Today we make marzipan that you can turn into vegan marzipan with only one small adjustment. Replace the pasteurized egg whites with the liquid from a can of chickpeas, that's all! Let the marzipan rest in the refrigerator for a day before you eat it, so the flavours can blend. No problem, that's why we started early :))

How to make real almond marzipan

NB Preferably do not us almond flour to make marzipan, it is too dry and it does not taste as good as ground almonds.

Chop the almonds and grind them finely in the food processor.

Place the ground almonds into the mixer bowl.

Squeeze an orange to get the fresh juice.

Weigh 20 grams from the egg whites.

Add honey, egg white and juice.

Mix until combined.

Knead a moment by hand.

Weigh pieces of 30 grams.

Roll the marzipan inyo apples.

Press in a small hole.

Stick in almonds and pieces of cinnamon stick.

The marzipan apples are ready but the mini-monsters prefer chocolate coins ;)))

To taste the best the marzipan should get to room temperature before you eat it
