100g smoked bacon
1 tablespoon olive oil
1 clove garlic, crushed
1 shallot
900 ml vegetable stock, from 1 cube
250g dry or fresh pasta
100g cherry tomatoes
100g mushrooms, sliced
100g baby spinach leaves
50g Parmesan cheese, grated
freshly ground black pepper

The simplest dishes are often very tasty, and that is also true for this one-pot pasta. Easy to make, ready quickly, exactly what we want on a beautiful summer day. But do mind! The time of cookingthe pasta depends on the pasta. So read the packaging! Fresh ipasta usually needs 4 minutes but dried pasta must cook for +/- 10 minutes! We leave out the tomatoes but have the tomato salad of yesterday on the side.
How to make this pasta dish
Preparations:
Fry the bacon in it's own fat.
Drain on kitchen paper.
Was and drain the spinach.
Cut onion and mushrooms.
Peel the garlic and crush it
Add the olive oil to the pot.
Bake the onion and garli a few seconds.
Dissolve the vegetable cube in warm water.
Add the stock to the pan.
Stir in the pasta and cook it.
Then stir in the mushrooms.
And then the spinach.
Let the pasta simmer for another 4-5 minutes and grate the Parmesan cheese coarsely
Finally gently fold the grated cheese into the pasta.
Serve the one-pot-pasta with tomato salad en fresh bread.
