175g softened butter
100g light brown caster sugar
250g flour, plus extra for dusting
1 egg yolk (freeze the egg white)
1 teaspoon vanilla extract
250g icing sugar
2-3 tablespoons cold water
3-4 drops of lemon juice
red or pink food colouring
sprinkles and edible glitter
Today we are making Fairy wands for a little birthday girl. The recipe is for 12 wands but you either have to bake them in two batches (we did) or use 2 baking trays. You also need: a star cookie cutter - 12 wooden sticks - 12 coloured ribbons.
Tip! Cut the tips off the sticks, they are quite sharp and if you place the sticks in cold water before you start, they will not discolour during baking.
How to make the Fairy Wands
Place the sugar, butter and flour in the food processor.
Pulse until it looks like sand, then mix in yolk, vanilla and water.
Place the dough on a baking mat and knead it briefly by hand.
When the flour is completely absorbed the dough is ready.
Shape the dough into a disc, wrap in cling film.
Let the dough rest for 30 minutes, in the fridge.
Roll out the dough to 1.5cm thickness.
Cut out 12 thick stars from the dough, app. 1.5 cm.
Place 6 stars 10-12 minutes in the fridge and then insert the sticks.
Bake the other 6 stars in10-12 minutes light golden brown.
Let the stars cool briefly on the baking tray.
Make the pink icing while the biscuits cool down.
Sift the icing sugar and add the water and lemon.
Stir it then stir in the food colouring,
Pour the icing over the biscuits using a teaspoon.
Spread it out and sprinkle with glitter.
Let the icing set completely.
Tie a ribbon around the stick and the first fairy wands are ready..
With the secons batch of Fairy wands in the oven we first make tea.
The birthday boy or girl can first taste the wands, with a lovely cup of tea!
The magic Fairy wands taste best just out of the oven but can be kept in a closed container for up to 3 days.
Happy Birthday!
