To get a tasty fig jam you start one day ahead already, with soaking the dried figs. Cover them with boiling water, so they will be nice and soft tomorrow. Then you can process them better.
How to make fig jam
Let the figs drain, remove the stalks and cut them finely.
Put the sugar into a pan.
Add the figs to it.
Stir until combined.
Juice the fruit.
Add orange and lemon juice to the figs, bring the mixture to the boil and let it boil really well for 1 minute
Pour the jam into the sterilized jars.
Close the the jars really well.
Turn the jars over for 5 minutes.
Allow the fig jam to cool thoroughly, then store it in a cool, dark place. After opening store always in the refrigerator!
