Shopping List for 24 mini-muffins
150g self-raising flour
1 free-range egg + 1 yolk
90 ml extra virgin olive oil
150ml semi-skimmed milk
100g grated Old Amsterdam cheese
50g grated Parmesan cheese
3 spring onions
sea salt
black pepper to taste
On a lazy Sunday we have fun baking mini-cheese muffins. They are very tasty, the recipe is super easy and they are quickly ready. Only one drawback ... every time we have to make more because they disappear from under your hands...
How to make mini cheese muffins
Put flour and the egg in the blender.
Add the milk to it.
Add the olive oil as well.
Mix the batter quickly smooth.
Preheat the oven to 180°C
Add the cheese to the batter.
Chop the spring onions, add them and pulse.
Greas a 24 hole muffin tin.
Season the batter with salt and pepper and taste it!
Fill the holes up to 2/3 with batter.
Bake the muffins for +/- 15 minutes.
Let them cool slightly in the tin.
Serve the mini muffins warm.
