Shopping list
125g butter, cut into cubes
150g chocolate, chopped into pieces
225g soft dark brown sugar
3 organic free-range eggs
1 teaspoon vanilla extract
250g plain flour
30g Dutch cocoa powder
½ teaspoon baking powder
18 marshmallows, in halves
Serve with cocoa powder or icing sugar

Today we are baking a classic cookie (with a story!)t hat is very popular with American children, the Whoopie Pie. There is much debate about which state the Whoopie Pie originated from and how old this cookie actually is. As far as we know, the Whoopie Pie was either invented and baked by the Amish in Pennsylvania or in New England, at least sometime in the 1900's.
About the origin of the name of the cookies there is not so much debate. The name comes from the Amish children, who cheered Whoopie! Pies! when they first saw the cookies. :)) Let see what our little monsters will cheer...
How to make classic Whoopie Pies
Melt the butter cubes au bain marie.
Chop the chocolate into pieces.
Melt the chocolate together with the butter.
Mix the sugar with the eggs and vanilla.
Sift flour, baking powder and cocoa in a second bowl.
Stir the sifted flour mixture together until combined.
Remove the chocolate mixture from the heat and stir.
Now combine the three mixtures as follows
Pour the chocolate into the egg-sugar mixture.
Stir the 2 mixtures until well combined.
Then pour the chocolate mix into the flour mixture.
Stir all 3 mixtures together until well combined.
Preheat the oven to 190°C and place a sheet of baking paper on the baking tray
Using a mini-ice cream scoop, scoop little dough balls.
Bak 12 cookies at once, 16 in one go will be fine too!
Bake the cookies for 6-8 minutes, then they will still be soft.
These cookies taste like a combination of biscuit and cake
Place marshmallow halves on top.
Place the cookies back in the oven.
Soften the marshmallows in 2-3 minutes.
Meanwhile let the remaining cookies cool slightly on a wire rack
Press the slightly cooled cookies on top.
Allow the biscuits to cool.
Place the first cookies on a serving plate.
We brew the tea and taste the Whoopie Pies while the next batch of cookies is baking in the oven
Dust the Classic Whoopie Pies with icing sugar or cocoa powder, whichever you prefer
