Chapatti is a thin, round flat bread commonly eaten in India, Nepal, Bangladesh, Pakistan, East Africa and the Caribbean. In Rotterdam we know the bread better as Roti, topped with chicken, potato, egg and long beans. Today we are making Mrs. Kapoor's Chapatti, luckily they stay on the plate :))
How to make Chapatti
Put the flour in a big bowl.
Add the salt.
Add a little water and knead.
Gradually trickle in more water.
Keep slowly trickling in water while you keep kneading, the longer you knead, the softer the bread will be
The dough should feel smooth and elastic, you may not need all the water
Knead the dough for 10 more minutes.
Knock it back and roll it again.
Divide the dough into 8 equal balls.
Flatten them then roll them out.
Roll neatly into circles.
Melt butter in a frying pan.
Fry the Chapatti 20-30 seconds.
Flip over and fry 10-20 second on the other side.
When the brown spots appear the Chapatti is cooked.
Stack the Chapatti on a plate and optionally place kitchen paper in between, to absorb any excess butter.
