200g floury potatoes
30g cream cheese
150g smoked salmon
a few sprigs of chives
1 lemon, only zest
1 teaspoon horseradish sauce
15g capers (optional)
sea salt & freshly ground black pepper
75g fresh bread crumbs
3 tablespoons of olive oil
These small salmon bites are ideal for New Year's Eve. You can make them ahead of time and freeze them. They are quick and super tasty!
How to make the salmon bites
Boil the potatoes - without salt - until soft.
Let them steam, grind them fine and let them cool.
Mix the cream cheese with the potatoes.
Add the shredded salmon.
Mix all ingredients together, by hand.
Roll approximately equal balls between your hands.
Preheat the oven to 200°C
If you want to freeze the bites, now is the time.
Cover the fish balls with the breadcrumbs.
Drizzle olive oil over the bites, place them on the baking sheet.
Bake the bites 5 - 6 minutes in the oven, then turn them over.
Halfway through, drizzle some olive oil on the other side.
Bake the other side for 5 to 6 minutes and let them cool.
Without the capers the mini-monsters love the bites! They call these snacks salmon bitterballen, which actually is a pretty good name in The Netherands ;D
