2 soles
freshly ground pepper and sea salt
2 tablespoons flour
1 tablespoon olive oil
1 firm knob of butter
½ organic lemon
a handful of parsley
Serve with:
French fries
a green salad with cherry tomatoes
appel sauce
Today we are eating fish, but our mini monsters do not want to eat fish. They think that is sad, fishes have to swim. We try to explain to them that in nature everyone eats to survive. Animals and people (also a species) eat each other.
The little monsters are young but also smart, they think that there is enough other food in the supermarket to survive. There is not much to say against that. Fish for two tonight and French fries with salad and apple sauce for everyone. Delicious. everyone says!
How to make Sole à la meunière
Peel, wash, cut and pre-fry the fresh French fries.
Make a green salad with onion and cherry tomatoes.
Cut a sping onion into rings, sprinkle over the lettuce.
Chop the flat parsley finely and set it aside for the sauce.
How to fry the fish
Cover the Sole with the flour and tap of any excess flour
Heat the olive oil.
Melt the butter in the hot oil.
Place both fish in the pan.
Fry the fish for 4 minutes on each side.
If necessary, add small knobs of butter during frying to prevent the fish from sticking
How to make the beurre noisette (brown butter sauce)
Toss the frying fat and wipe the pan.
Heat the pan and melt a knob of butter in it.
Warm the butter until it has a hazelnut colour.
Squeeze the lemon and add juice to taste to the butter.
Add the parsley and scrape over the bottom of the pan.
Quickly fry the fries and let them drain on kitchen paper.
Finish the salad, spinkle with onion and tomatoes.
It is time to plate up!
Pour the hot, foaming butter over the fish.
Serve the Sole Meunière with French fries and the salad.
For our mini-monsters no fish (!) but the French Fries with lettuce and homemade applesauce taste delicious too !
