1500 gram ripe vine tomatoes
4 garlic cloves, sliced
1/2 bunch of flat parsley
olive oil to taste
Making fresh passata is not difficult with this recipe from an Italian chef, we wanted to start right away when we read it. Passata in a package or bottle is okay but if you make it yourself once you will taste the difference. It takes some time, but it is easy to freeze, so you can also keep it for a long time. From now on we make our own. ;)
How to make fresh passata
Preheat the oven to 160°C then wash and cut the tomatoes and slice the garlic.
Put the tomato parts in an oven dish.
Sprinkle the tomatoes with salt, pepper and garlic.
Sprinkle with olive oil then place the dish in the oven.
Roast the tomatoes in 45-60 minutes brown.
Chop the parsley roughly.
Blend tomatoes and parsley.
Stir in the tomato puree.
Close the bottle well.
Keep the passata in the fridge but store what you've made to much in the freezer.
