Homemade strawberry pudding

Shopping list
3 sheets of gelatin
300g fresh strawberries
50g icing sugar
150 ml double cream + 100 ml extra
1 tablespoon fine sugar

optional: pink sprinkles

Making fresh strawberry pudding yourself is not difficult with this recipe from Karin Luiten (koken met Karin). Every Saturday you find one of her recipes in newspaper Trouw, nice to try out this recipe for snazzie. We do not regret it, the pudding is very delicious! But on a small scale, we took shot glasses for the mini-monsters and small molds for the maxi-monsters. Then it's a pity when it is finished so it is not too much.

Soak the gelatin sheets 5 minutes in cold water.

Wash the strawberries and allow to drain.

Dissolve the gelatin in a saucepan on low heat.

Cool until room temperature in a cold water bath.

Blend the strawberries until it is puree.

Add the icing sugar to the puree.

Stir it in firmly.

Stir in the gelatin too.

Beat 150 ml of the cream.

Add the strawberry mixture.

Fold it gently into the cream.

Beat the extra double cream with the tablespoon of sugar for the kids and make layers in shot glasses.

Let the pudding set in the fridge for a few hours.

Delicious!

NB For adults, the pudding with some withheld strawberries on the side tastes nice and fresh but rich. The kids love whipped cream, so we add a few teaspoons on the pudding for them. Be stingy, otherwise the pudding will have a greasy aftertaste. We still plan to make this pudding with milk instead of double cream, to see how it turns out!
