125g fresh (soft) anari or ricotta
100 ml (whole) milk
2 large free-range organic eggs
½ organic lemon, zest only
60g caster sugar
a pinch sea salt
60g plain flour
½ teaspoon baking powder
2 tablespoons unsalted butter
2-3 nectarines or peaches, sliced
½ tablespoon orange blossom water
2-3 tablespoons honey
A handful pistachios, finely chopped
A few fresh mint leaves, coarsely chopped
For a little birthday boy who loves pancakes, we're making a Greek pancake - with a recipe from Cyprus, to be precise - and it's delicious! We make a few minor adjustments - to suit the birthday boy's taste - but we do post the full recipe at the top of this blog. You'll see what's missing on our pancake and this way it's your choice ;))
How to make a Greek pancake
Drain the ricotta.
Add the milk to it.
Separate the eggs and add the yolks.
Keep the egg whites.
Put the egg whites in the fridge for now.
Add sugar and salt to the ricotta mixture.
Sift flour and baking powder in another bowl.
Stir the flour and baking powder briefly together
Whisk the ricotta mixture until combined.
Add the sifted flour mixture to the ricotta mixture.
Fold the flour mixture into the ricotta mixture.
Make sure to fold in the flour lightly, until all is well combined.
Fetch the egg whites from the fridge
In a clean bowl beat the egg whites into stiff peaks.
Add the egg whites to the ricotta mixture,
Fold in the egg whites light and airy.
Preheat the oven to 180°C and place a rack in the middle
Place an ovenproof pan on medium high heat
Add 2 tablespoons butter to the pan.
Wait for the butter to bubble.
Pour the batter into the pan.
Now place the pan in the oven.
Bake the pancake for 20 - 25 minuts until golden, cooked and risen
Meanwhile cut the peaches into wedges.
Mix them with the orange blossom water and honey.
Remove the pancake gently from the pan.
Place the pancake on a large plate and spoon the peaches on top.
Drizzle the honey and orange blossom mixture over the pancake.
Finally you can sprinkle the Greek pancake with pistachios and mint leaves, or not! :)))
