Shopping list, makes 20 latkes.
500g russet potatoes
1 medium yellow onion
⅓ cup plus 2 tablespoons mochi flour (sweet rice flour)
2 free range organic eggs, lightly beaten
½ teaspoon kosher salt
700 ml vegetable oil, for frying
As promised, here's the recipe for yummy mini latkes. The mini monsters love it, it's deep fried potatoes, then we also have a delicious sweet pear sauce on the side. For savoury lovers there is also smoked salmon and a green salad with spring onion and cherry tomatoes. This is a festive meal and that works out very well on Hannukah!
How to make the best mini latkes
Peel, wash and dry the potatoes.
Grate the potatoes on a block grater.
Place the grated potatoe on a clean tea towel.
Roll the towel firmly and twist it tightly.
Keep wringing repeatedly until no more moisture comes out of the potatoes, you will be surprised how much it is!
Grate the onion(s).
Place potatoes and onion in a large bowl.
Add the eggs, salt and flour.
Pour the oil into a large, heavy-bottomed pan and let it heat up on medium low heat
Stir it all firmly together.
Shape 5cm ø potato patties,
Heat the oil to 160°C
Place a wire rack on waxed paper.
You can fry several mini latkes at the same time, try out how many can go in your pan
Fry the Latkes in 5 - 7 minutes golden.
Drain them on kitchen paper.
And allow to cool slightly.
