How to bake Mouse biscuits

for the Chinese New year!

Shopping List
250g plain flour
½ teaspoon baking powder
150g butter (room temperature)
150g caster sugar
½ free range egg (beaten)
1 teaspoon vanilla essence
various colours fondant icing
edible marker, black

This year we make mouse biscuits for the Chinese New Year, 2020 is the year of the rat (or mouse). The mini-monsters most beloved biscuits are our basic vanilla cookies so that will be it again. Coloured fondant has to be on the mice of course because that looks so cute ;) You could also dip the mice in melted chocolate. If you use white, milk and dark chocolate it also looks great and it tastes even better! (find the maxi-monsters).

How to make mouse biscuits

Beat the butter with the sugar until creamy.

Beat 2 to 4 minutes

Beat in egg and vanilla.

Beat until fluffy.

Add sieved flour and baking powder.

Beat it in briefly, in parts.

Knead into a ball and wrap in cling film.

Place the dough minimal 1 hour in the refrigerator then preheat the oven to 175°C

Roll the dough to   cm thickness.

Cut out the mice.

Place them on baking paper.

Place in the fridge for 20 minutes.

Bak the biscuits in 10 minutes light brown.

Allow the mice to cool completely.

Cut mice out of coloured fondant icing.

Stick them on the biscuits using a drop of water.

Make eyes and whiskers with the edible marker.
