150ml whole milk
200g chocolate buttons
80ml water
10g gelatin
50g caster sugar
1 free-range organic egg + 4 yolks
pinch of salt
100ml double cream, sweetened

250 ml slagroom + 2 eetlepels fijne suiker

We make a delicious chocolate pudding, based on a recipe by Cees Holtkamp. We use Belgian chocolate and fresh whipped cream, so you can't help but enjoy this delicious pudding. We decorate the pudding with fresh mandarins because they are in season.
How to make a real Holtkamp chocolate pudding
Soak the gelatin in 80 ml of water.*
Heat the milk and add the chocolate to it.
Let the chocolate melt while stirring.
Allow the melted chocolate to cool.
*Heat the water with the gelatin on low heat, stir until it is completely dissolved and let it cool
Beat egg + yolks with sugar and salt au bain marie and stir in the gelatine.
Now stir the cooled chocolate / milk into the egg mixture.
Fold the cream into the chocolate mixture.
Empty the mold and fill with the chocolate.
Press on cling film and let cool.
The cling film ensures that no skin forms on the pudding, let the pudding cool to room temperature and then place it in the refrigerator
Allow the pudding to set overnight
Day 2
Put cream and sugar in the mixer.
Beat the cream until stiff.
Spoon the cream into a piping bag.
Scrape the mandarin completely clean.
Place a large dish on top en turn platter and mold upside down
Give it a firm shake to get the pudding out.
Pipe cream all around and place mandarin wedges on the pudding.
