1 large cucumber
2-3 red onions
150 ml apple cider vinegar
1 teaspoon sugar
1 teaspoon sea salt
1/4 teaspoon ground black pepper
Tomorrow we are making chicken curry sandwiches and that includes pickled sweet and sour veg. It gives the sandwich just that little bit of extra freshness. It is very easy to make and if you put it in the fridge overnight it is even tastier.
How to make sweet and sour pickles
Wash an organic cucumber very well.
Grate the cucumber into thin slices.
Peel the onions and grate them thinly as well.
Put onions and cucumber together in a large bowl.
How to make the dressing
Add the sugar to half of the the vinegar.
Dissolve the sugar by stirring firmly.
Season with salt and pepper.
Pour it into the veg and fold it in gently.
Spoon the vegetables into a clean glass jar.
Fill up the jar with the remaining vinegar.
Seal the jar with preserved vegetables closed.
Place the veg overnight in the fridge for the flavours to blend really well.
Tomorrow we serve the pickled onion and cucumber with the chicken rolls. ))
