Shopping list for 12 cupcakes
250g caster sugar
250g butter (room temperature)
3 free-range organic eggs (room temperature)
1 teaspoon vanilla extract
250g self-raising flour
4 tablespoons milk
Italian Meringue Butter Cream
pastel coloured fondant icing
fresh fruit
Summer starts near the end of the month and we are already anticipating that :)) We make beautiful cupcakes, delicious with Italian butter cream and fresh fruit. There are plenty of strawberries for sale and the Dutch blueberries also are in season again.
How to make the cupcakes
Download the recipes and make cupcakes and Italian buttercream
Allow the cupcakes to cool completely.
Cut various colours circles of fondant icing.
Fetch the butter cream from the fridge.
Beat the cold butter cream a moment using a mixer until nice and smooth
Spoon the butter cream into a piping bag.
Dril holes in the cupcakes and fill with butter cream.
Place the icing on the cupcakes and pipe butter cream.
Cut the cleaned fruit and place it on top of the cupcakes.
