125 grams butter (room temperature)
125 grams caster sugar
1 free-range organic egg (small)
1 teaspoon vanilla extract
250 grams (Zeeland) flour
½ teaspoon baking powder
various colours fondant icing
With our fun new cookie cutters we bake cheerful summer cookies today. The recipe is known and the fondant icing too, only the cookie cutters are new :)) We just like to show you how fun our bucuits will turn out, with these cutters. The monsters are very happy with the biscuits!
How to make these summer biscuits
Make the biscuit dough from the recipe and put it in the refrigerator for 60 minutes
Knead the dough well for a minute.
Roll it to 1cm thickness.
Cut out the figures.
Place on baking paper on the tray.
Cover the biscuits and place them in the refrigerator for another 30 minutes
Then preheat the oven to 175°C
Fetch the biscuits from the fridge.
Bake them light golden in 15 minutes.
Let rest on the baking tray for 5 minutes.
Let the summer biscuits cool completely on a wire rack.
Roll out the fondant icing and cut out lighthouses.
Stick the icing on the biscuits with a drop of water on the back.
Cut stripes, windows, doors out of the fondant icing.
Use the cutter for this and stick it all on the biscuits.
Mix black and white, knead it until you have steel grey for the anchors,
Cut out the anchors and stick them on the biscuits, stick on a flag as well.
Store the summer biscuits in a biscuit tin.
They won't be in there very long ;))
