For the sunny biscuits
200g flour + 2 tablespoons extra
1 teaspoon turmeric
pinch of salt
100g butter, cold and cubed
80g honey
½ free-range organic egg, beaten
For the honey glaze
50g icing sugar
1 tablespoon clear honey
2-3 tablespoons hot water
a few drops of yellow food colouring
Saint John's Day is coming and with the sun shining more and more often, baking biscuits is a must. The choice is not difficult, we already know which biscuits it will be: Sunny Honey biscuits. They are tasty and cute, the mini monsters love them!
How to make Sunny Honey Cookies
Put flour, turmeric and salt in the food processor.
Mix it all together and leave the foodprocesser on.
Add the butter cubes gradually while the machine is mixing.
Add the honey when the dough looks like coarse crumbs.
Mix the honey briefly into the crumbs.
Shape a flat disc of the dough.
Wrap the dough well.
Let the dough rest in the refrigerator for 30 minutes
Knead the dough briefly.
Roll it thinly.
Cut out little suns.
Place the biscuits on the baking tray.
Place the biscuits back in the refrigerator for another 30 minutes
Preheat the oven to 180°C
Fetch the biscuits from the fridge.
Bake them for 8 - 10 minutes.
Allow them to cool on a wire rack.
Stir the icing while the biscuits are cooling
Add the honey to the icing sugar.
Stir it together and add the hot water.
Stir a tiny drop yellow food colouring into the icing.
Firstly pipe an edge of icing all around the biscuits.
Let the edges set for a moment and then fill in the middle of the suns
Let the icing dry completely.
Serve the sunny honey biscuits with a cup of tea.
