How to make apple en cucumber sandwiches
1 baguette; juice of ¼ lemon; 1 apple; 200g cream cheese; ½ cucumber
Cut the baguette into 5cm pieces, then cut in half.
Mix the apple slices with lemon and cream cheese.
Spread sliced cucumber onto the baguette.
Spoon apple-cheese mix on, cover with top half baguette.
How to make smoked salmon & cream cheese
8 slices white bread; a head of lettuce; 150g herb cheese; 200g smoked salmon; a bunch fresh chives
Toast the white sandwich bread.
Remove the crusts.
Spread the bread generously with herb cream cheese.
Place the salmon on top, then put on the chives.
Cut the sandwiches diagonally into four
How to make paté & cranberry sandwiches
8 slices dark country bread; 100g of pate; cranberry compote; a handful iceberg lettuce; a bunch of chives
Spread iceberg salad on 4 slices wholemeal bread.
Press thick slices of paté on the iceberg salad.
Spoon a generous amount cranberry compote on the paté.
Cover with 2 whole-wheat slices and cut in four.
How to egg and mayonnaise sandwiches
8 wholemeal slices; 4 free-range eggs, hard boiled, coarsely chopped; 2 spring onions, finely chopped; 2 gherkins, finely chopped; 4 tablespoons mayonnaise; salt & pepper
Chop the hardboiled eggs, sprinkle on salt&pepper.
Add the finely chopped onions and gherkins to the eggs.
Fold the mayonnaise gently into the egg mixture.
Cover the bread with lettuce then spoon on salad.
Cover the slices with the remaining bread, remove the crusts and cut the bread into 4 long strips
