Strawberry Blondies

 200g butter
 200g soft light brown sugar
 200g white chocolate, in small pieces
 3 organic eggs
 1 teaspoon vanilla extract
 275g all purpose flour
 50g clotted cream (or whipped cream) + extra
strawberry compote
On the first day of our mini-monsters summer vacation we made strawberry compote. Tomorrow we are baking Blondies with it, for them. Very yummie with white chocolate, fresh strawberry compote, and clotted cream. We bake the Blondies muffin size, in the recipe you find the originals.

We’ll turn it into a little celebration, once they’ve slept in to their heart's desire. That’s a great start to their summer break!

How to make Strawberry and Cream Blondies 
Melt the butter on medium high heat.
Wait for it to foam and to turn golden.
Stir removed from the heat brown sugar in.
Add 150g of the white chocolate and stir it in.
Line a 20x30 brownie tin with waxed paper or place muffin cases in your tin
Add a pinch of salt to the mixture.
Then beat in the eggs, one by one.
Stir until the chocolate has completely melted.
Preheat the oven to 190°C / 170°C fan
Stir the vanilla into the mixture.
Pour the mixture into a large bowl.
Gradually sift in the flour.
Fold the flour into it.
Until your batter is airy and smooth.
Fold in the remaining chocolate.
Fill the cases generously.
By using an ice cream scoop the Blondies turn out evenly
Fetch the strawberry compote out of the fridge.
Spoon some strawberry compote on top of the Blondies.
Also add  some clotted cream on top.
Bake the Blondies in the middle of the oven.
Bake the Blondies for +/- 25 minutes, if you use a muffin tin
If you bake in the large 20x30cm tin, it will take about 40-45 minutes until ithe Blondies are done!
Allow the Blondies to cool in the baking tin.
.Pipe a small rosette of clotted cream on top of the Blondies.
