50g salted butter, softened
50g caster sugar + extra for dusting
50g clotted cream
1 teaspoon vanilla extract
150g flour, extra for dusting
Serve with

We have a simple American recipe for making Shortbread cookies. We think those cookies are perfect for 4th of July. They look delicious, and they also contain clotted cream and strawberry slices. On top no, in between(???) Yes, they are sandwich cookies. Instead of eating one cookie, you eat two at the same time. In the true , well kmown American tradition: more is better. We are making half a recipe today, because we actually support less is more ;)))
How to make Strawberry - Clotted Cream Shortbread Sandwiches
Sweet organic strawberries at Ekoplaza.
Wash the strawberries until clean.
Drain them on a clean tea towel.
Cut the strawberries into slices.
How to make the shortbread cookie dough
Add the butter, sugar, clotted cream and vanilla to the mixer.
Beat the mixture until it's pale of colour and creamy.
Sift in the flour and fold it lightly into the mixture.
Knead the dough briefly by hand.
Let it chill for 30 minutes.
Knead the dough briefly.
Roll it to ½ cm thickness.
Preheat the oven to 160°C and place baking paper on the baking tray
Cut circles out of the dough.
Place the circles on the baking tray.
Bake the cookies for +/- 15 minutes.
Let the cookies 5 mins on the tray.
Then move the cookies carefully tot a wire rack until they are completely cooled
Then stick the two cookies together and dust them with icing sugar.
The strawberry / clotted cream shortbread sandwiches are really delicious, now we regret only making half a recipe > <
