Shopping list
For the filling
2-3 apples, peeled and diced
3 tablespoons dark brown sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
For the dough
1 roll of puff pastry
1 free range organic egg yolk
1 tablespoon milk
Today we're making quick apple empanadas! If we have plenty of time, we make the dough ourselves, as described in the recipe. But today we have a lot to do and we still want something tasty with tea, this afternoon. That's why we buy a roll of fresh puff pastry, these empanadas are also very tasty!
How to make quick apple empanadas

Soak the raisins in warm water.
Peel the apples thinly.
Cut the apples into small cubes.
Pour 1 teaspoon oil in the pan.
Heat the pan and add the apples cubes and raisins.
Stir the brown sugar, lemon, cinnamon and vanilla into the apple mixture.
Let the apple mixture simmer over low heat until the apples are soft.
Allow the apple mixture to cool.
Cut 9 cm circles out of the dough.
Add 1 spoon apple to the dough.
Fold the dough in half.
Stick the edges of the empanadas firmly together with some water and press them tight!
Fold the edges upwards and indent with your pinky.
Beat the egg yolk unti loosend and then beat in the milk.
Brush the empanadas with the eggwash mixture.
Poke some holes in the dough.
We have +/- 1 apple left over.
Place the empanadas on the baking tray.
Bake for 15-20 minutes.
Or until they have a beautiful, light golden brown colour.
We have a real treat with our tea today!
