75g blanched hazelnuts
75g all-purpose flour
75g of fine sugar
75g unsalted butter, cubed
60g of dark chocolate
What better cookies to give to Dad on Father's Day than Lady's Kisses? We really wouldn't know! That is why today we bake deliciously fresh hazelnut cookies with chocolate. No father can resist Baci di Dama, for sure!
How to make Baci di Dama
We first make hazelnut flour, nice and fresh from whole hazelnuts
Weigh the hazelnuts.
Put them on baking paper.
Roast them for 6 minutes.
Allow to cool down.
Put them in the food processor.
Grind the hazelnuts finely.
Now you have hazelnut flour.
How you make cookie dough with hazelnut flour
Add the butter to the flour.
Add the sugar too.
Finaly add the plain flour.
Mix it into a soft dough.
Sprinkle your workplace with flour and knead the dough briefly by hand
Tip the dough out of the food processor.
Roll the dough into 2 cylinders.
Wrap them in cling film.
Let rest for 1 hour in the fridge.
Place waxed paper on the baking tray.
Roll the dough into (8g)balls.
Let the cookies rest for 1 hour in the fridge.
Preheat the oven to 180°C
Slide the tray in the middle of the oven.
Bake the cookies for 20 - 25 minutes.
Let the baci di dama cool.
Dpread chocolate on one cookie and press on a second.
