Bake Super Mario Cupcakes

for the Birthday Boy or Girl

Shopping list for 6 cupcakes
125g caster sugar
125g butter (room temperature)
2 free-range organic eggs (S - room temperature)
1 teaspoon vanilla extract
125g self-raising flour, sifted
2 tablespoons milk
250 ml double cream
2 tablespoons caster sugar
Fondant icing: red; yellow; green; blue

Today we're baking cupcakes for a Birthday Super Mario fan. Our little monster loves simple vanilla cupcakes. We bake them regularly because everyone loves them. But for a birthday, you like to make something special.

We've tried all sorts of things to add variety to the cupcakes, like chocolate cupcakes, marbled cupcakes (chocolate and vanilla mixed together), with chocolate chips or fruit or coloured buttercream and the answer is always the same: not so good, or it's okay, but better... So here they are again: our famous vanilla cupcakes! ;))

How to make Super Mario Cupcakes

Mix the butter with the sugar in 10 minutes creamy and pale.
 
 
 
 
 
 

Beat the eggs and add them to the butter mixture.

Then add the vanilla and whisk it in briefly.

Add the sifted flour gradually and fold it into the mixture.
 
 
Once everything is well combined, add the milk.
 
 

Fold the milk into the batter briefly.

Place the paper cases into the baking tin.

Preheat the oven to 180°C

Spoon the batter into the paper cases.

Place the tin in the middle of the oven.

Bake the cupcakes for 20-25 minutes.

Let the cakes cool in the baking tin on a wire rack.

While the cupcakes are cooling you make the decoration

Beat the cream with the sugar until stiff.

Spoon it into a piping bag with a rosette nozzle.

Cut coloured MARIO letters out of fondant icing.

Print (optional) cake toppers of the internet.

Pipe whipped cream onto the cupcakes.

Push in the MARIO letters.

And your homemade toppers.
