1/2 Turkish bread
1 big smoked mackerel fillet
1/2 lemon
1 tablespoon pomegranate molasses
1 teaspoon honey
6 tablespoons olive oil
1/4 iceberg lettuce, finely sliced
1/2 red bell pepper, finely sliced
1/2 carrot, julienne or grated
1 small red onion, finely sliced
sea salt & black pepper
1 tablespoon thick organic yogurt
1 tablespoon mayonnaise
finely chopped flat parsley
Balik Ekmek - in English fish and bread - is street food is Istanbul. You can buy the sandwiches at the stalls along the waterfront, filled with grilled mackerel. How to make Balik Ekmek with a British twist
Start with slicing, shaving or grating the vegetables, toss them together in a bowl and set aside.
How to make the dressing
Measure molasses, honey, vinegar, oil, salt and pepper.
Pour all ingredients in a bottle that can be closed off.
Shake the bottle until all ingredients are well combined.
Get the bowl with the salad, add enough dressing to coat it.
How to plate up the sandwiches
Stir yogurt, mayonnaise, parsley with salt&pepper together.
Spread the sauce on the sandwich, cover it with the salad.
Top it with de mackerel in pieces, serve wedges of lemon on the side.
Optional: sprinkle on Turkish chili flakes and enjoy!
