Shopping list
1 packet of puff pastry (also gluten free)
1 free range egg (just the yolk)
2 apples
100g sultana's
2 tablespoons of caster sugar
cinnamon powder to taste
What's not to like about apple/raisins/cinnamon-wafers? Using puff-pastry they are quickly made, so a really good little recipe to make with the kids. The idea is of the Flemish television chef Jeroen Meus from the Dagelijkse Kost (Daily Food) show.
Jeroen fills the wafers with bacon and egg as well but nobody over here liked those, altough ketchup made it a little better. If you think you would like those, be our guest and try them :) We also make the wafers with banana and chocolate chips, the kids adore those!
How to make filled puff pastry wafers
Beat the egg yolk lightly then set aside.
Peel and core the apples then cut them into cubes.
Add the sugar and the cinnamon to the apple cubes.
Stir in the raisins and add a small dash of water.
Bring the apple mixture to the boil, stew until it's mush.
Preheat the wafer iron
Cut the puff pastry into even squares.
Spoon filling on half of the squares.
Press on the other halves with beaten egg.
Cook the wafers until golden in +/- 10 minutes.
Sieve icing sugar on the wafers whith a sweet filling.
