Shopping list
1 cucumber
1 carrot
3 tbspoons caster sugar
3 tbspoons rice vinegar
2 tbspoons sea salt
250ml warm water

Sweet sour home

For Chinese New Year, we make three dishes which together make one super-tasty dish. We make Char Siu Bao. Steamed buns (bao), with Char Siu (marinated lean pork roast) and sweet&sour pickles. Traditionally Char Siu is cooked on the barbecue but in the midst of winter we opt for the oven ;)


We start with the sweet&sour vegetables

Peel the cucumber and the carrot.

Cut both into match sticks.

Place the vegetables in a preserving jar.

Dissolve the three remaining ingredients in the water.

Pour the mixture into the jar and seal it.

Place the jar overnight in the fridge so the flavours can blend. It will keep for one week in the fridge.
