125g plain flour
25g cocoa powder
1 teaspoon baking powder
1 large free range organic egg
60g caster sugar
2 tablespoons vegetable oil
100ml whole milk
50g chocolate (chopped)
coloured fondant icing
We bake Chocolate-Chip-Christmas-Muffins for the mini monsters. They do not like the meringue Christmas wreath very much, which we made for tomorrow. Hello Kitty is still a favorite and chocolate is too, so we don't have to think hard about it ;))
How to make Chocolate Chip Hello Kitty Christmas Muffins
Day 1
Roll white fondant icing thinly.
Cut out Hello Kitty Heads.
Roll eyes and noses, stick in.
Cut holly leaves and roll berries.
Stick the Holly on the Kitty heads.
Line a muffin tin with six Christmassy paper cases.
Day 2
Preheat the oven to 180°C /160°C fan
Sieve flour, cocoa and baking powder into a bowl.
Mix the egg, sugar, oil and milk together in a jug.
Gradually pour the egg mixture into the dry ingredients.
Add the chopped chocolate, fold in until combined.
Spoon the batter into the cases.
Bake the muffins for 20-25 minutes.
Remove the muffins from the oven.
Leave to cool in the tin at first then on a wire rack
Whip the cream then pipe it on the cupcakes.
Press the Hello Kitty's into the cream.
