Shopping list (+/-35 cookies)
235 grams of flour
200 grams of cold butter, in cubes
75 grams of fine sugar
1 packet of vanilla-flavored sugar
1 tablespoon cocoa
1 bag of Nescafé espresso
2 tablespoons of boiling water
180 grams of milk chocolate
50 grams of white chocolate
Now that Eid-al-Fitr is coming up, we are making all kinds of delicious treats, today too! We divide the recipe in 2 and bake the cookies in 2 batches. Half the dough with coffee and half with milk (for the little monsters). How do we tell those cookies apart? We make half milk chocolate with white stripes and half white with milk chocolate stripes, the latter are (of course) for the little monsters ;)))
How to make make Chocolate Coffee Cookies
Dissolve the coffee in boiling water, sat aside.
Sift the flour into a large bowl and stir in the cocoa.
Stir in sugar and vanilla sugar until all is well combined.
Add the butter cubes to the flour mixture.
Rub the butter cubes into the flour mixture.
Add the coffee when the dough comes together.
Knead the dough briefly by hand
Shape the dough into little cylinders.
Bend the cookies a little round.
Cool the cookies for 1 hour..
Preheat the oven to 180°C
Bake the chocolate coffee biscuits for 15 minutes
Meanwhile chop the chocolate.
Melt the chocolate au bain marie
Allow the cookies to cool on the baking tray.
Allow the melted milk chocolate to cool slightly too
Dip the biscuits into the chocolate and let set for a moment.
Meanwhile melt the white chocolate au bain marie.
Stir and let the chocolate cool slightly again.
Pipe white lines of chocolate on the biscuits.
Place the Chocolate Coffee Biscuits on a pretty serving dish.
We will have some tea now, with biscuits.
