200 grams softened butter + extra
200 grams caster sugar
4 organic eggs
1 teaspoon vanilla extract
200 grams self-raising flour
Zest of 1 organic lemon ot 1 teaspoon juice
3 tablespoons full-fat yogurt
250 ml slagroom
2 eetlepels suiker

Every party needs something delicious, even if it's just a very small one. That's St. Patrick's Day in the Netherlands, because it's actually celebrated mainly by people of Irish descent. But our little monsters love crafting and reading aloud, and with something delicious to go with it, it soon becomes a party. That's why we bake lemon yogurt cakes, and they're super delicious! :))
How to bake lemon yogurt cakes
Beat butter and sugar until creamy.
Like you see in this picture.
Beat in the eggs one by one.
Whisk in vanilla extract.
Gradually sift the flour into the bowl.
Fold in the flour and then the yogurt.
And finally fold in lemon zest or juice.
Preheat the oven to 185°C and keep de baking tray on hand
Grease the baking tins.
Place waxed paper on the bottom.
Fill the tins up to 3/4th.
Bake the cakes for app. 20 minutes.
Allow the cakes to cool on the baking tray.
Transfer the cakes to a wire rack.
Beat cream and sugar until stiff peaks appear.
Pipe the whipped cream onto the cakes.
Scatter (green) sprinkles on top of the lemon-yogurt cakes.
