cranberry sauce, made of fresh berries
cooking spray
1 tin croissant dough
some plain flour
1 ball mozzarella
roasted unsalted pecans
sprigs of fresh rosemary
Also needed: a 24 holes mini muffin baking tin
We are making more snacks for New Year's Eve because we like a bit of variety. Preferably less of each type but more in different flavors. Today we are making our own cranberry sauce and we are combining it with mozzarella. We think these bites are very tasty!
How to make Cranberry-Mozzarella Bites
Start by making the fresh cranberry sauce
Wash the cranberries and place in a pan with some water,
Add the sugar and bring the water to the boil.
Lower the heat and then you can hear the cranberries pop.
Let the sauce thicken without the lid in app 10 minutes.
How to make the Bites
Sprinkle your work surface lightly with flour
Roll out the dough, press the seams closed.
Cut the dough into squares.
Grease the tin with baking spray.
Press the squares into the holes.
Drain the mozzarella.
Cut the mozzarella into cubes.
Divide the cheese cubes over the cups.
Preheat the oven to 200°C and slide the baking tin when ready into the middle of the oven
Meanwhile divide cranberry sauce over the cups.
Bake the cranberry bites until golden, in app. 15 minutes
Let them cool in the tin for 10 minutes.
Then transfer the bites to a wire rack.
Chop the pecan nuts into fine pieces.
Decorate the Cranberry-Mozzarella Bites with pecans and rosemary.
