125g soft butter
125g caster sugar
1/2 free-range organic egg, small
1/2 teaspoon vanilla extract
150g Zeeland flour
rolled fondant, in various colours
For Earth Day, we're baking cute biscuits in the usual way. Make the dough from the recipe and put it in the fridge for a few hours. Knead the dough briefly, roll the dough and then cut out rectangles. Place the biscuits in the fridge for another hour, so that the cookies don't spread while baking.
How to make these Earth Day cookies
Preheat the oven to 170°C
Fetch the biscuits from the fridge and slide them in the oven.
Bake them for 12-15 minutes until golden.
Let the biscuits firstly cool on the baking tray.
Then transfer them to a wire rack to cool completely.
Cut rectangles from blue and brown fondant.
Cut the rectangles neatly in half.
Stick the 2 halves on the cooled biscuits.
Cut out leaves of green fondant.
Cut carrots out of orange fondant.
Stick the carrots on the biscuits.
Cut radishesout of red, pink and white.
Stick on the radishes as well and let the biscuits dry.
Then you make tea to go with the biscuits, to celebrate Earth Day!
