375 gram flour
225 gram butter
225 gram caster sugar
1 free range egg
1 sachet of vanilla sugar
1 teaspoon bakingpowder
2 teaspoons icing sugar
2 drops of water
small piece of chocolate
ribbons and celophane bags
Bake these cute Easter Bunny vanilla biscuits together with the kids. The biscuits are delicious and the dough is very easy to make. Kids from 9 years old and up can make them - almost - by themselves ;) If you put the cute bunnies in a cellophane bag it is also a nice treat for a March or April birthday boy or girl.
How to make these Easter Bunnies
Weigh butter and sugar and add the vanilla sugar.
Mix butter and sugars until they're creamy.
Add the egg and mix it through the creamy mixture.
Stir the salt and the baking powder in the flour.
Add the sifted flour in parts to the dough and mix it in.
Keep mixing until the dough looks like big crumbs.
Knead the dough crumbs by hand until smooth.
Place the dough in a bowl and cover it with cling film.
Place the covered bowl for 1 hour in the fridge.
Knead the dough quickly and roll it until it's 1.5 cm thick.
Use a cookie cutter to cut out bunnies.
Place the cookies on a parchment covered baking tray.
Preheat the oven to 170°c.
Slide the tray in the middle of the oven.
Bake the cookies +/- 12 minutes and let them cool on a wire rack.
In the mean time stir the icing sugar with a drop of water smooth.
Tie a yellow or green ribbon around all the bunny necks.
Use a stick to put a drop of white icing on the cookies for the eye.
Melt a small piece of chocolate for the pupils.
Let the chocolate eyes dry before you pack the bunnies.
Stick the bunnies in transparent bags and close the bags with some extra ribbon. You've made some fab Easter Bunnies!
