The Basic Vanilla Cake

for your Cake Pops

200g soft butter
200g caster sugar
3 organic eggs
1 teaspoon vanilla extract
200g self raising flour, sifted
with a pinch of salt
1 tablespoon milk (whole or semi-skimmed)

Today we are baking a basic vanilla cake, which we will turn into cake pops tomorrow. Because tomorrow is St. Patrick's Day! And even if you aren't Irish by birth or you don't live in Ireland, you can still make it a fun day. A fun craft activity and something yummie with your tea will get you in the festive mood very quickly!

Today we are baking the cake first, which means delicious cake with tea today. :)) Half a cake is enough for 12 cake pops tomorrow, which is more than enough for our little monsters and any friends who might come along. After the cake, we will prepare the buttercream frosting in advance, so we can get started right away tomorrow!

Here is how to bake the vanilla cake

Mix the butterwith the sugar.

Scrape the edge of the bowl clean.

Beat in the eggs one by one.

Add the vanilla extract.

Briefly whisk the vanilla into the butter mixture and remove the bowl from the mixer.

Gradually sift flour and salt in the mixture.

Fold it in lightly in several batches.

Finally fold the milk into the batter.

Preheat the oven to 170°C

Grease the cake tin and dust it with flour.

Spoon the cake into the tin and smoothen the top.

Slide the cake tin in the middle of the oven.

Bake the cake fot 50-55 minutes until cooked and golden.

Let the cake cool briefly in the baking tin, then tap it out of the tin and carefully loosen the corners if necessary
 
 

Let the cake cool completely on a wire rack.

Cut half the vanilla cake into neat slices.

Maybe we prefer to make the buttercream tomorrow morning ...
